Welcome to Uncle Bobs Bakery
Uncle Bob's Bakery was established in 1993 and is a privately owned organisation. The owner is Brett Noy, he is a multiple industry award winner, Australian Baking Team Member and Team Captain, who grew up in the baking industry with fond memories of working in his parents bakery in the central Queensland town of Barcaldine.
After the completion of his apprenticeship he gained a technical, research & development background with companies such as Defiance, Goodman Fielder & Retail Food Group, this background ensures the continual development and quality of Uncle Bobs products.
Brett is the winner of the Australian Artisan Baking Cup and was part of the Australian Team that competed in the International Baking Cup in Rimini Italy, in 2008. The Team did Australia proud winning the window display section and placing 6th overall. Brett produced a replica Sydney Opera house out of bread dough, for the National Monument section, which was a crowd favourite.
The history of Uncle Bobs
The name Uncle Bobs originated from Bretts father – Robert Noy, himself a multiple industry award winner. Bob started his apprenticeship in Beaudesert at the tender age of 14 with Panitz Bakery. Bob was trained the old fashioned way using traditional techniques and recipes. Bob still loves to recount his days on the peel of the old woodfired ovens and bulk fermentation doughs. Bob and wife Noelene went west in the late seventies and opened Noy's Bakery in Barcaldine, quickly developing a reputation across the central west for high quality products and service.
Brett served his apprenticeship under his father and as a result believes in, and follows the same old fashioned and traditional ways of baking. Bob and his wife Noelene are still an integral part of the Uncle Bobs team assisting with production, deliveries and advice where needed.
Uncle Bobs Bakery today
There are 3 Uncle Bobs Bakery outlets on Brisbane’s southside. Uncle Bobs Bakery is one of the few bakery groups that still cater for all your bakery needs with a great range of traditional & gourmet bread products, a full range of cake products, from birthday cakes and gateaux’s through to your family favorites such as Lamingtons & Custard Tarts. A big part of Uncle Bobs product range today is their Artisan Breads and Pastries, these include their award winning Sourdoughs, Ciabatta, Turkish Breads, and handmade Croissants and Danish.
Artisan Baking is an ancient form of bread making that uses preferments and very long periods fermentation to achieve unique flavours and exceptional keeping quality, these replace the chemical improvers, emulsifiers, and preservitives that have unfortunately become common place in todays normal high volume bread production enviroments. Bretts recent win at the Australian Artisan Baking Cup and Australian Baking Team selection, is testiment to the passion, commitment and quality of the Uncle Bobs baking team and their Artisan Bread and Pasty range.
Uncle Bobs also has award winning pies & pastries and most recently awarded Champion Pie at the Royal Queensland Baking Show and was official runner up in the in the Great Australian Meat Pie Competition in 2005 and again in 2006 and 2007 placed in the top 5 pies in the country.
The use of Artisan and Scratch Baking methods is a high priority in Uncle Bobs production philosophy, and its this combined with an uncompromising attitude to product quality, and customer satisfaction that ensure all our products give that unique taste experience. This same attitude extends itself also to ingredient selection, where possible local ingredients are sought, such as our use of Olive Oil from the Darling Downs, and whilst alot more expensive we will only use Australian Dried fruits as they are quite simply the best in the world. Where imported ingredients are used its normally because they are the best available, not because they are cheap!
Unlike most bakeries who tend to get their flour from one supplier we source our flour from all over Australia then blend together different varieties and strengths to suit the product we're making, this takes a little longer and is again more expensive in some cases up to $350 per tonne but we don't believe in compromising the quality of a product just to use one flour.
After overwhelming demand from Brisbanes top Chefs Uncle Bobs Bakery launched the wholesale arm of their business called Creative Crusts and now supplies a large number of the cities fine dining restaurants and cafes.
